Singapore Hokkien Noodles with Pork

Singapore Hokkien Noodles

serves: 6
  Singapore noodles with pork strips in a sweet soy sauce.
  2 T   peanut oil
  1 tsp.   crushed garlic
  1/2 tsp.   chilli or sweet chilli sauce
  2   eggs lightly beaten
  1 T   curry powder
    bbq pork finely sliced
  1   red capsicum finely sliced
  1   carrot finely sliced
    hokkien noodles
  1/2 cup   chicken stock
  1 tblspn   sweet soy sauce
  1 tspn   light soy sauce
  Heat wok on high sear setting, add the oil then garlic and chilli, stir for 1 minute, add the egg, and continue to stir until the egg is cooked.
Add the curry powder, pork and carrot, continue to cook for 2 minutes then add the noddles and sauce. Stir until the noodles are heated through.
