Tuna, basil and lemon pasta fritata

Ingredients:
  99.99 g   penne pasta
  2 bunch   asparagus (cuted into pieces)
  4   eggs
  4   egg whites
  2 can   tuna
  50 g   dried tomatoes
  1/4 cup   basil
  1 tbs   lemon rind
Directions:
  Cook pasta in a large soucepan of salted boiling water. adding the asparagus in the last 2 minutes of cooking. Drain well and return to the pan.

Whisk together eggs and egg whites in a jug. Add the tuna, tomato, basil, lemon rind and egg mixture to the pasta and toss until combined.

Preheat grill on high. Heat a 22cm non-stick frying pan over medium heat. Spray with oil to grease. Add the pasta mixture and press into the pan. Reduce the heat to low and cook for 10 minutes or until set around the edge but still runny in the centre.

Place pan under the grill and cook for 5-8 minutes or until golden brown. Set aside for 20 minutes to cool.
