Pan-fried Ham and Cheese Sandwiches

Ingredients:
  1/3 cup   breading
  2   boneless, skinless, chicken breast halves
  2 slices   swiss cheese
  2 slices   thin boiled or baked ham
  2   eggs, lightly beaten
  2 tbsp   olive oil
Directions:
  Place the flour(breading) on a plate and season it with salt and pepper.

Pound the chicken until very thin, about 1/8 in thick. Place 1 slice of swiss cheese and 1 slice of ham on each chicken piece. Fold the chicken in half, creating a half-moon. Dip the chicken in the eggs and dredge in the breading, shaking off any excess.

Heat the oil in a skillet over medium-high heat until hot but not smokig. Add the chicken and cook vof 4 or 5 minutes on each side, or until golden brown. Serve immediately.
