Parmesan Roast Chicken

Ingredients:
  1/2 cup   shredded Parmesan cheese
  1/2 cup   breadcrumbs
  1/8 tsp   salt
  1/4 tsp   pepper
  1/4 tsp   crushed dried thyme
  2 tbsp   Dijon-style mustard
  2 tbsp   olive oil
  4   boneless, skinless, chicken breast halves
Directions:
  Preheat oven to 375F. Grease ovenproof glass baking dish.

Combine cheese, breadcrumbs, salt, pepper, and thyme on one plate. Combine mustard and oil on second plate. Dip chicken in mustard mixture, then in cheese mixture, shaking off excess. Place chicken, skin side up, in prepared baking dish.

Bake 35 to 40 minutes or until tender and no longer pink (170F).
