Pork Satay

Serve with veggies and Onion Parmesan Roasted Potatoes. |
Ingredients: |

1/4 cup |
|
creamy peanut butter |
|
1/4 cup |
|
soy sauce |
|
2 cloves |
|
garlic, large, minced |
|
1 tbsp |
|
brown sugar |
|
1 tsp |
|
lemon pepper |
|
1 1/2 lbs |
|
pork tenderloin |
Directions: |
|
In small bowl, combine peanut butter, soy sauce, garlic, brown sugar and lemon pepper.
Place pork tenderloins in resealable plastic bag; add peanut butter mixture. Seal to close; shake to coat meat evenly. Refrigerate 2 houts or overnight.
Preheat oven to 425F. Remove port from plastic bag; discard marinade. Place tenderloins in roasting pan sprayed with nonstick cooking spray. Roast 25 minutes or until thermometer registers 150F. Let roast stand 5 minutes before slicing. Serve with coucous, if desired.
