Tortellini with Red Peppers and Prosciutto

cheese tortellini |
|
2 tbl |
|
olive oil |
|
3 cups |
|
broccoli florets |
|
1 each |
|
red bell pepper |
|
1 clove |
|
minced garlic |
|
2 ou |
|
prosciutto, thinly sliced |
|
1/3 cup |
|
dry white wine |
|
1 tsp |
|
white wine vinegar |
|
|
|
grated parmesam cheese |
Directions: |
|
Cook tortellini, drain and set aside. Heat oil to med high heat. Add broccoli and red bell pepper and saute 3-4 minutes. Stir in garlic and prosciutto; saute 1 minute more. Add white wine and vinegar and cook 30 seconds. Add cooked tortellini and toss 1 minute. Salt and pepper to taste. Garnish with grated cheese.
